Sequoia Sake is the first and only sake brewery in San Francisco and the winner of gold and bronze medals at the Tokyo Sake Competition in 2019. The management team together have over 30 years of combined sake education and making. You will have a golden opportunity to learn how sake is made that few have ever had the chance to have. Sequoia is one of only a handful of sake producers (worldwide) that control the whole process, from seed to sake in the bottle.

Duties will include:
Brewing: Learning and doing every step from weighing, washing, soaking, steaming, and cooling rice for each step of the sake making process. Fermentation, yeast
starter to main mash control and monitoring. Pressing sake mash, clarification, mixing and formulating then bottling.
Cleaning: Floors, walls, rice bags, fermentation tanks, press and all equipment used in each step of the process.
Bottling: Transfers, mixing and managing the filler, capper, and pasteurization processes.
Troubleshooting: Ability to ascertain issues before they arise and when they do ask questions on how we can prevent them in the future, with a focus on learning from
Maintenance: Assist as needed with the preventative maintenance of all brewery equipment
Standing: Ability to be on your feet for extended periods of time
Strength: Ability to regularly lift supplies and equipment up to 50 lbs. (i.e., bags of rice, ice, etc.)
Environment: Ability to work in a production environment where noise level is usually moderate to loud and warehouse temperature fluctuates according to the
weather. Appropriate PPE will be provided.
Proper hygiene: Required for a sake brewery. No fragrances or strong scents of any kind.
Reports to: Brewery Production Manager
Candidate must have:
Interest and desire to learn about sake making
Ability to follow oral and written directions with responsibility, unafraid to ask questions and/or additional guidance.
Ability to work independently, as well as in a team environment
Ability to work a rotating schedule, including early morning, and swing. (Currently we do not run a graveyard shift. Production is between 7 am and ~10 pm. With most
happening between 8 am - 3 pm)
Hourly, $19-23 to start, depending on experience - competitive pay rate for an experienced individual with the right skills. Growth of time and pay increase based upon training and ability to perform learned skills
