Ounce Cookies is a woman-owned business that specializes in craft cookies tailored to ingredient conscious consumers in a range of contemporary and cross-cultural flavors. Our tagline is “Picking & Pairing Ingredients with Care”. We carefully select & combine ingredients to highlight flavor, texture, and aroma. We avoid artificial colors and preservatives, and choose organic options wherever one exists. However, we are not USDA organic certified. There are 12 flavors in all, ranging from familiar to fusion. Our packaging highlights the hero/heroine of each flavor using colors and illustration to connect consumers with food, as it's found/seen in nature. We sell cookie gift sets direct to consumers in addition to servicing wholesale customers in the retail sector. We share a commercial kitchen with other food makers in San Francisco’s Dogpatch neighborhood.

Job Duties

Job Duties/Responsibilities

 Baking/Food Prep:

o Follow recipes and prepare a variety of different cookie doughs, frostings, fillings & toppings, and bake and finish items according to our standards.
o Food prep work (e.g., chopping nuts/chocolate, zesting lemons/limes, grating carrots).
o Ensuring all food is prepared, handled and stored according to required food safety standards
o Operating equipment including, but not limited to, mixers, ovens, gas stoves, 3-compartment sink/dishwasher, date coder, heat sealers, etc.
o Monitor ingredients levels and communicate to manager any resupply needs to ensure adequate inventory is on hand at all times

 Cookie Production:

o Scooping / weighing cookie dough onto baking sheets
o Shaping dough before baking (e.g., making thumbprint impressions using the tip of a fondant roller on certain cookies)
o Filling dough forms before baking off
o Frosting/glazing baked cookies with a delicate touch
o Topping frosted/glazed cookies with various toppings.

 Cookie Packaging: 

o Determining and documenting product Best by dates based on standard operating process
o Date stamping/apply date code to bags
o Neatly placing 2 cookies in each bag
o Heat sealing the top of each bag
o Folding cardboard boxes (gift boxes, retail case boxes, delivery boxes & shippers)
o Generating case/shipper box labels with product and/or customer-specific details
o Labeling the boxes & ensuring any inserts (eg, packing slips, invoices, void fill, gift messages) are included prior to delivery/shipping
o Neatly filling the gift boxes & retail cases with sealed cookie bags
o Establish Quality Control process to ensure correct labels are attached to the right boxes.
o Taking inventory of packaging supplies

 Team Work and Time Management:

o Interact with co-workers to ensure weekly production schedule is followed/coordinated in a smooth manner and production goals are met successfully.
o Identify and communicate any potential issues to Manager so that adjustments can be made if necessary.
o Help guide interns and/or junior staff as needed

 Maintaining Commercial Kitchen Sanitation Standards & Food Safety Compliance:

o Following and complying with Food Safety Rules and Hygiene best practices including keeping the kitchen workspace clean and organized, performing sweeping/mopping of work station area & dish washing, and ensuring compost/recycling/garbage are removed and transferred to collection bins.

Job Requirements

Physical Requirements:

 Able to stand for extended periods of time
 Able to lift at least 50 lbs. if necessary
 Frequent walking, kneeling, bending, and reaching overhead

Additional Requirements:

 Employees will be asked to review/sign an NDA (non-disclosure agreement) or CDA (confidentiality disclosure agreement) prior to reviewing and learning to bake the
products according to steps outlined in our proprietary recipes.
 Employees are requested to provide a copy of their current, up-to-date Food Handler’s Card or Food Safety Management Certification preferably within 30 days of
start date.

Skills/Experience Preferred

Desired Experience:

 2 years or more professional experience working in commercial kitchen setting, with an emphasis on making/mixing doughs, baking, piping/cookie decorating, and
making pastry fillings/frostings/toppings.
 Basic math skills for accurate counting and comprehending recipe measurement concepts (e.g., measuring ingredients, weighing dough on a kitchen scale in ounces
or grams & scaling recipes).
 Ability to use, or learn to apply a delicate touch when decorating cookies and packaging finished product.
 Organizational skills and attention to detail & accuracy are a priority.
 Cross-functional team communication skills and willingness to work with / interact with other team mates and external parties (e.g., suppliers, customers, other
businesses that share the kitchen space)


$19-20, DOE
