Dandelion Chocolate is a bean-to-bar chocolate factory in San Francisco’s Mission District. We make chocolate from only two ingredients, cocoa beans and cane sugar, and travel to origins as often as we can to build good, trusting relationships with the producers who grow and ferment the beans we buy. Every chocolate bar we make starts with the bean, and now we’re looking for a Pastry Assistant at our 16th Street Factory to help us showcase our single-origin chocolate in our drinks and pastries in our San Francisco cafés.
About the Role:
Reporting to our Executive Pastry Chef and working closely with our Executive Sous Chef, our Production Sous Chef will oversee all planning and production for shippable pastries and baked goods. You will lead a small team of production and packaging assistants and ensure that we maintain our high quality standards in our kitchen. Your day might start with a short meeting with the Exec Pastry Chef to check-in on weekly product deliverables and inventory before adjusting the schedule to accommodate for one of your team members who called out sick the night before. You have a morning meeting with the team before jumping in to bake off a batch of graham crackers for the s’more kits. In the afternoon, you take inventory and notice that we went through cake boxes faster than we anticipated, so you order more in the next batch, keeping in mind the two-week lead time. Wrapping up your day, you work on production with the team and train the new packaging assistant on the proper bow tying technique before tidying up for the day, ready to do it all again tomorrow.
Above all, you are a leader and a team player with an eye for detail and excellent communication skills. You easily switch from scooping batter to diving into an ordering spreadsheet to training the team on a new recipe. You are a steady and empathetic leader who knows that no plan ever goes perfectly -- chocolate melts, pastries get roughed up in transit, and team members call out last minute, and you always have a Plan B (and C and D) in your back pocket just in case. You maintain extremely high standards in our kitchen and serve as an example for the team. Whether it’s a clean spoon or a helping hand, the team knows they can rely on you for your steady leadership and guidance.
Daily operations -- Oversee all daily kitchen operations including ordering ingredients and packaging materials, creation of prep lists, weekly planning, scheduling, and staffing. Responsible for keeping expense reports up to date and writing weekly reports to managers.
Systems and processes -- Establish pars and systems for pastry and drink ordering, production, storage, and delivery.
Production -- Participate in day-to-day production with the team and jump in as needed to ensure we always hit our production goals.
Team management -- Coach team and grow individuals. Address any performance or interpersonal issues. Maintain a high bar for performance. Facilitate weekly one on one check-ins with team members and write annual performance reviews. Work with People Operations to hire when necessary.
Communication -- Maintain open communication with our Executive Pastry Chef, Executive Sous Chef and Product Managers to keep them aware of progress and any anticipated hiccups so that there are no surprises.
Other tasks as necessary
Leadership -- 2+ years in a Sous Chef, lead, or management position where you were running a significant operation and leading a team.
Kitchen Chops -- You have worked in a kitchen or bakery environment before where high quality standards and meeting aggressive goals are essential.
Excellent communication skills -- Your communication style is approachable and clear, making it easy to coordinate with your team as well as other managers across the company.
Tech skills -- You are familiar with Google Suite and can create a spreadsheet to track ingredients or forecast pars. You can pick up new tools as necessary.
